After the cherries are harvested, the outer hull is removed, but some of the mucilage (the sticky, sweet substance surrounding the bean) is left behind. The beans are then dried with this mucilage still attached.

This technique is called " honey " because the mucilage has a texture and sweetness similar to honey, although no real honey is used at any time.
