What do you need to make coffee in a Chemex?

  • Chemex (3, 6 or 8 cups)

  • Chemex paper filters

  • Freshly ground PEPPO'S coffee (very important!)

  • Filtered water

  • Gooseneck kettle (ideal)

  • Digital scale and stopwatch

Recommended coffee:

Step-by-step recipe: how to make coffee in a Chemex

Recommended ratio:

  • 30 g of PEPPO'S coffee

  • 500 ml of filtered water at 92–94 ºC

  1. Place the filter and rinse it with hot water
    This removes flavors from the paper and heats the Chemex. Don't forget to throw away that water.

  2. Add the medium ground coffee (like table salt)
    Use a grind specifically for Chemex . You can order it ready-made for this method at PEPPO'S.

  3. Pre-infusion or "bloom"
    Pour in 60 ml of water to moisten all the coffee. Wait 30–45 seconds. You'll see it begin to "bloom."

  4. Pouring in circles
    Pour the water slowly in a circular motion, without touching the edges, until you reach 500 ml. Take your time (3–4 minutes total).

  5. Remove the filter and serve
    Enjoy a clean, aromatic coffee full of personality.
